Homemade Breakfast Burritos

I think at one point in time someone has pestered you as a kid that you need to eat your breakfast because it is the most important meal of the day. Which is true, but when you become an adult and have 90 things that need to be completed by 8:00am so you can attempt to get to work on time, sometimes breakfast gets skipped.

Though I am still not a big fan of making breakfast, I try on Sundays to plan out my meals for the week to come. These breakfast burritos are perfect for the quickest grab and go meal that taste delicious, have good ingredients in them, and even the kids will approve. You can make a variation on these with different veggies or meat this is just my standard build.

Each batch makes about 7 burritos, so if you double the recipe in about an hour you can have 14 breakfasts. These are also bomb to have in the morning after a big sleepover or party at your house and make it into a make your own breakfast burrito bar.

Recipe: Homemade Breakfast Burritos

Servings: 7 burritos

Oven Temp: 350F


2 tbsp                    Extra Virgin Olive Oil

12                           Breakfast Sausage links

1/2 cup                 Mixed Bell Peppers and Onions

3/4 lb                     Tater Tots

6                              Eggs

1/2 tsp                  Salt

1/2 tsp                  Ground Pepper

1/4 cup                 Milk

1 cup                     Spinach

1/2 cup                 Shredded Cheese


7                              Large Flour or Whole Wheat Tortillas

Turn your oven onto 350F. Grab a large cookie sheet and line with tin foil. Take you sausages and place them on one side. Take the frozen or pre-sliced peppers and onions and place in the center. Finally the tater tots placed in the third section. Take your 1 tbsp of Olive oil and drizzle it all over the pan. Place into the oven. It should take 25 mins for the tater tots and the sausages to brown and cook through while the peppers roast. After every 10 mins grab a wooden spoon and turn all the tater tots, sausages, and peppers over to make sure they cook even on all sides.

While the pan of pepper, sausage and tots are in the oven cooking, you will want to cook your eggs. In a large bowl whisk your eggs, milk, spinach, salt and pepper. Turn your skillet onto medium low heat with the second 1tbsp of olive oil is in the pan. Add your bowl of eggs to the pan and cook them low and slow so the scrambled eggs do not get hard. One the eggs are cooked place them on a plate for burrito construction time.

Grab your tortillas and place them in the microwave for 15 second. It is much easier to wrap the tortillas and have them hold their shape when they are warmed.

Grab your tortilla and place it on the cutting board. Next take your eggs and place a serving of them in the center of your tortilla. I added cheese, salsa, pepper, tater tots and a sausage to my burrito. Once everything is in there, fold in the sides and roll. Continue on with the next six.

Once all of the burritos are done you can place them in individual Ziplocs and store in the freezer until next time you are craving a breakfast burrito. This is such a simple and easy recipe to complete, hopefully this helps make your mornings a bit easier.
