Cauliflower Rice Chicken Stir-Fry

Many years ago, before it was the trendy thing to do, my mom made my dad and I mash potatoes out of Cauliflower… needless to say they were terrible! So when the new phase of cauliflower rice came out I was most certainly not on board!

I don’t eat rice, I haven’t for years, but there are some recipes that I do miss that include rice. So while I was shopping at Trader Joes one day, one of the workers assured me that this cauliflower rice they were sampling tasted exactly like rice! Based on my previous experienced I assumed it was a ploy so I tried it just to tell him he was wrong…. well I was wrong. It tasted just like it! I was so shocked I grabbed two bags.

My all time favorite rice recipe is Fried Rice Chicken and Vegetable Stir Fry. But this is a much healthier version. With flavorful chicken sautéed with an awesome Asian mash up of veggies sitting on top of a perfect bed of “fried” Cauliflower rice, this is a great dinner. I have even tried this out on my dad, who had no clue it was not rice. So if you are trying to cut carbs or just eat a bit healthier this is a great recipe for the whole family.

Recipe: Cauliflower Rice Chicken Stir-Fry

Servings: 6

-Chicken –

6                            Chicken thighs (use breast or tenders if you have that)

1 tsp                      Chopped Garlic

1/8 tsp                  Ground Ginger

1/4 cup                 General Tsao Stir Fry Sauce

1/4 cup                 Soy Sauce (or Amino Acid Sauce if you have that)

1 tbsp                    Extra Virgin Olive Oil


-Cauliflower Rice-

1 bag                     Cauliflower Rice (frozen 12oz)

1 tbsp                    Extra Virgin Olive Oil

2 tbsp                    Butter

1/4 tsp                  Garlic Salt

1 tbsp                    Soy Sauce

2                              Eggs


Sautéed Veggies-

In the vegetable section at your super market they normally have pre-cut Stir-Fry Veggies, if so grab that. If not use veggies you have at home to make a version of that.

1 pack                   Broccolini

1 cup                     Spinach

1/4 cup                 Sliced Bell Peppers

1/4 cup                 Baby Corn

1/4 cup                 Snap Peas

1/2                         Carrot, sliced and diced

1 tbsp                    Extra Virgin Olive Oil

1 tbsp                    General Tsao Stir fry sauce


Chicken first: Take all the ingredients, minus the oil, and place in a Ziploc bag. Mix the bag around well so all of the chicken thighs are coated in the sauce. I normally stick this bag in the fridge for 4 hours so it can marinade. You can also do this the night before you plan to eat, so the chicken with be extra flavorful.

Once the chicken has had its time to marinade, place the oil in a large sauce pan and turn on to medium heat. Once the oil is hot, place your marinated chicken thighs in the pan. Cook for 6 mins on each side. Once the chicken is cooked, place on a cutting board to cool down. You then want to slice the chicken into small strips.

Cauliflower rice: In the same pan, take you butter and oil on medium heat to heat up. Grab your frozen cauliflower rice and place it in the hot oil. * Always use frozen cauliflower rice, it cooks better and doesn’t get soggy. Never defrost either. Take straight out of the freezer to pan*. Use your wooden spoon to break up the frozen cauliflower in the pan. Once the cauliflower is heated through, add the garlic powder and soy sauce. At this point the “rice” should be turning a nice brown color and starting to get a “fried” look on the outside of it. Add your two eggs to the rice. Stir the rice around constantly until the eggs turned into cooked scrambles eggs. Take your cauliflower rice off the stove and place onto a plate.


Veggies: In the same pan on medium heat take all of your veggies and oil and place in the pan. You want to sauté your vegetables. Little bit of crunch to them but not too hard. When you see them starting to wilt add the Stir Fry sauce and mix well.

Grab your plate with the rice on it, add the veggies and chicken on top! There you have it the perfect healthy dinner meal. This also freezes really well, so whatever you do not eat store in Tupperware in the freezer for another day.
